ZION ACRES NATURAL GRASS FED BEEF
Locally raised beef that tastes great and is good for you.
Did you know that natural grass fed beef has many great nutritional benefits that make it superior to store bought, feedlot beef? It’s lower in fat, higher in Omega 3, and much higher in Vitamin E than commercial feedlot beef. You can rest assured we have used no growth hormones or chemicals in our beef. They are grazing on the lush pastures along the Newaukum Creek near Enumclaw and in winter are fed quality hay from a local “certified organic” farm. For those of you who purchased our beef last year, I hope your freezer is getting empty, and you are ready to fill it up again.
The supply is limited. These cattle are harvested, on site from June through November. They are available on a first come, first served basis. They are available to purchase by the side (half beef) or half side (1/4 beef), and are sold by the pound based on the hanging weight of the sides after slaughter. The price is $3.50 per pound hanging weight and this includes the kill fee and being cut and wrapped to your specifications. The sides are given a tag number in the field and weighed in at Olson’s Meats in Enumclaw. Normally these cattle will dress out at 60% +/- of the live weight. Here is an example of a typical breakdown.
Live Weight =1000 lbs. Hanging weight = approx. 60% or 600 lbs. (300 lbs per side). 300 lbs X $3.50 per pound = $1050 for a side of beef or $525 for a half side, cut and wrapped, ready for your freezer. Obviously not all sides will be the same size. If you have a preference for a larger side or smaller side please make a note on your return form. Also this price does not include offal; heart, liver, tongue and tail. For those customers who want the offal it can be purchased separately from Olson's. Those who don't want it don't pay for it. Heart, tongues and tails are not divided so we will accommodate as we are able on a first ordered, first accommodated basis.
Our meat is processed at Olson’s Meats in Enumclaw. It is aged for approximately 2 weeks in the cooler and then cut and wrapped. Adam, the manager, will go over your cutting options with you and answer any questions about the butchering process. (Note: there is bone weight loss, fat trimming and some shrinkage in the cut and wrap process from hanging weight amounting to approx. 35%). If you want large bones for your dogs just let Adam know. To reserve your beef a deposit is required; $200 for a half beef, $100 for a quarter beef.

GRASS FED LAMB
Like our beef, our lamb is also grass fed and grass finished. Lambs are born in the Spring and grow throughout the Summer and Fall. Katahdins have a mild flavor, not strong or oily like some breeds. They are available by whole or by half. The price is $5.50 per pound hanging weight and this includes processing by the butcher. Deposits for lamb are $100 for a whole or $50 for a half.

FRESH EGGS FROM PASTURED HENS
The benefits of eggs from free-range hens are many. According to Mark Gordon Brown, contributing author at SocyBerty.com, "Not only are eggs from free range hens better tasting, but they are actually healthier for you. Plus the hens have better lives. These are several good reasons for picking free range egg." Some of the many reasons include freshness, up to 30% lower cholesterol, twice the vitamin A and E, up to twice the amount of Omega-3 Fatty Acid, and up to five times the Beta Carotene - just to name a few. Eggs are available for pick-up at the farm year round as availability permits.
